Mississippi Comeback Sauce

It’s the sauce that keeps you coming back for more! This sauce is seriously addictive! If you haven’t tried this yet you need to make this ASAP!

This sauce can be used for so many yummy foods! Try Comeback Sauce with; onion Rings, fries, sweet potato fries, hamburgers, veggies (for a low carb snack). If you are doing low carb just be sure to use a low sugar ketchup.

Every time I serve this I always have people asking what it is and asking me for the recipe. It’s so delicious! Stores great in the fridge, you will always want to have some on hand.

THIS SAUCE IS FAN-FRICKEN-TASTIC!

Many versions exist of this famous southern-style sauce. Here’s my slightly northerinized version of Comeback Sauce.

Mine has a bit less worcestershire sauce, as I’m not much of a fan of the flavor if there’s too much, and I upped some of her spices and removed the additional fat for the oil.

No doubt hers is a LOT more authentic than mine since she’s a native Mississippian and the sauce has it’s origins there. Read her story on her sauce recipe about the history of this sauce and some “saucy” other names that it goes by.

This sauce is delicious on french fries, onion rings, wings and just about every other darned thing you eat. Great on burgers and fish too.


Makes a pint jar full.

– 1 cup mayonnaise
– 1/4 cup ketchup
– 1/4 cup chili sauce
– 1 tsp Dijon mustard
– 1 tsp onion powder
– 1 tsp garlic powder
– 2 teaspoons Worcestershire sauce
– 1/2 teaspoon ground black pepper
– 1/2 teaspoon Tabasco sauce
– 1/4 cup olive oil
– juice of one lemon

Mix all ingredients well and store in refrigerator overnight. It needs to sit to let the flavors become “acquainted”.

Use on EVERYTHING (except cheerios)!

Sour Cream Chicken Enchilada Casserole

Ingredients :
4 cups diced cooked chicken1 can cream of chicken soup8 oz. (1 cup) sour cream2/3 cup milk1 (4 oz.) can diced green chiles2 Tbsp. dried minced onion1 tsp. garlic powderpepper to taste12 corn tortillas2-3 cups shredded sharp cheddar cheese

Instructions :
Spray a 13×9 dish with cooking spray. Preheat oven to 350 degrees.In a large bowl, combine soup, sour cream, milk, chiles, onion, garlic, and pepper.Line bottom of 13×9 with 6 tortillas.Sprinkle with 3 cups of chicken and pour 1/2 sauce over top and spread to cover.Sprinkle with 1/2 of the cheese. Repeat.Bake for 30 – 40 minutes or until hot and bubbly.Let stand 10 – 15 minutes before serving.

Without further ado, here are my top tips for baking a great pie crust, regardless of what recipe you use:

Keep your fat cold.
Pea-sized specks of butter should be visible in the mixture.
Refrigerate the dough after mixing – but not for too long.
Roll carefully and slowly.
Rechill the dough before baking.
Build a protective barrier to keep the crust crisp.
Make plenty and freeze!
Bake your pie on the bottom rack of the oven.
INGREDIENTS
4 cups flour
1 3/4 cups shortening
1 T sugar
2 t salt
1 T vinegar
1 egg
1/2 cup water

INSTRUCTIONS
. Using a fork or pastry blender, mix together the first 4 ingredients.
. In a separate dish, beat the remaining ingredients. Combine the 2 mixtures, stirring with a fork until all ingredients are moistened. Then divide into 5 parts and shape into balls. Chill for 15 minutes before rolling out or wrap and freeze.

Games of horseshoes, badminton, and croquet had everyone busy, laughing, and chatting about local news. And soft blankets and quilts layed out in the shade were sure to be found to plop down on when it was time to eat!

When evening came, the adults sat around talking and enjoying lots of cold beers and cocktails, and us kids chased lightning bugs, played Kick the Can, and Ghosts in the Graveyard! When it was dark enough, we all hoped that someone brought some fireworks!

Summer seemed never-ending, and days lasted forever! And those weekends with family, friends and neighbors, sharing food and just enjoying the day, sadly seem to be long gone.

Either most have to work, or just don’t seem to be very friendly and neighborly anymore.

The hubs and I luckily have very nice neighbors next door, but we gave up on the rest of the neighborhood. To each his own. But maybe this summer we can get a few more people around the block to all get together and have a backyard barbecue! Finishing this pork roast out on the grill for the last 30 minutes just might be enough to bring them out of their shells!

So, if you’re wanting to have a backyard barbecue, Sunday dinner, or want to have leftovers of tender, juicy, pork roast thinly sliced for sandwiches to pile high, this recipe is just the ticket!

It’s really nice to take to someone else’s house when it’s almost done, too, because you can just finish it up right on the grill! Plop the roast into a cooler and bring along the sauce, and you’re serving this incredible roast up in just 20 – 30 minutes!

So plan to have this classic-style Coca Cola Pork Loin Roast soon! And make sure you make extra sauce for dippin’ and drizzlin’ over those sandwiches! Enjoy!!

Ingredients:

1/4 cup soy sauce
1 cup Coca-Cola
1/2 cup dark brown sugar
2 tablespoons Dijon mustard
3 tablespoons oil
2 tablespoons Worcestershire sauce
1/3 cup ketchup
2 cloves garlic, minced
1 tablespoon dry mustard
2 tablespoons balsamic vinegar
1 teaspoon ginger
1 teaspoon thyme, crushed
5 pounds pork loin roast, boned

Directions:

Combine all the ingredients except for the meat, to form a marinade. Set the pork roast in a plastic bag with a zip-type seal, pour in the marinade and seal the bag. Set the plastic bag in a serving bowl large enough to steady the roast and keep the marinade ingredients from spreading away from the roast.

Let stand for 24 hours or overnight in the refrigerator, patting and turning the bag every few hours to ensure the meat marinates evenly. This helps the roast absorb the marinating liquids and creates a tender, juicy and flavorful roast.

Remove roast from marinade and discard the marinade. Place roast, fat side up, on rack in roasting pan. Insert roast meat thermometer so the bulb is centered in the thickest part. Do not add water. Do not cover. Roast in a slow 325 degree preheated oven until the thermometer registers to 175 degrees. Allow 30 to 40 minutes per pound for roasting, so for a 5 pound loin roast, you would be roasting for about 2-1/2 to 3 hours. During last 1/2 hour of cooking time, brush on the glaze. If you prefer, you can just as easily cook on the grill or in the smoker. Remove from the oven and out of the pan onto a platter; cover with foil tent to seal steam and rest the meat 15 minutes before slicing and this results in a much juicier roast. NOTE: Alternatively, you can slow-roast. Instead of roasting at 325, use a slow oven at 250 – 275 degrees, and allow almost twice as long. The meat will be even more tender. Use your meat thermometer or whatever means you like to achieve desired doneness.

Coca-Cola Sauce:
1 cup brown sugar
1 tablespoon cornstarch
1/2 teaspoon dry mustard
2 tablespoons butter
1/3 cup balsamic vinegar
2/3 cup Coca-Cola
Sea salt and fresh ground pepper
Mix together all ingredients in sauce pan; simmer and stir to thicken. Brush or spoon glaze on meat frequently during cooking. You can also serve any remaining sauce with the sliced pork if you like.

HOMEMADE KENTUCKY BLACKBERRY COBBLER

This Kentucky-style blackberry cobbler is perfect for hot summer evenings. Best enjoyed with cream and a cold mint julep on your wrap-around porch.
Ingredients
2 1/2 c blackberries, washed
1 c sugar
1 c flour
2 t baking powder
1/2 t salt
1 c milk
1/2 c unsalted butter, melted

How to make it :
Stir together just the berries and sugar in a large bowl and let it sit out for 25-30 minutes. Preheat oven to 375?. Stir together the flour, baking powder, salt, and milk with a wooden spoon. Next, stir in the melted butter and hand-mix it until the ingredients are well incorporated and you have few clumps. Pour batter into medium baking dish and smooth it out. You can choose to line it with parchment paper or not, but don’t grease the pan. Finally, pour the macerated blackberries on top with all the sugar included and evenly distribute it over the batter.
Bake for 45 minutes to an hour, depending on how golden you prefer it to be. Let it cool for 5 minutes so it will hold its shape.

Mom’s Famous Cream Puffs – These Cream Puffs Go Perfectly With A Cup Of Tea

Ingredients:
1 stick butter (8 Tablespoons)
1 cup water
1 tsp vanilla
4 eggs
1c flour
MOM’S FAMOUS FILLING:
1 pint heavy cream
1 package (3.4 OUNCES) instant vanilla pudding
⅓ cup milk
Makes approx 16

Instructions:
Bring the butter, water and vanilla to a boil.
Add the flour and stir constantly until it leaves the side of the pot and forms a ball.
Remove and cool.
Beat in 4 eggs, one at a time until smooth.
Drop by T. onto parchment lined cookie sheets
Bake at 400 degrees for about 25-30 minutes.
LET COOL.
Slice in half and pipe or scoop in Mom’s filling.
Dust with powdered sugar.
Filling:
Beat the cream, pudding powder and milk in a mixer until thick like whipped cream!

Best Hawaiian Roll Ham Sliders Ever!

These delicious little delights are great for a picnic, a party, a main dish or just a snack. They are a great “go to” recipe when asked to bring something to any gathering.
To Make this Recipe You’Il Need the following ingredients:

Ingredients
2 pkg Hawaiian sweet dinner rolls (12 per package)
1 pkg deli sandwich ham, 16 oz.
12 slice Swiss cheese
1/2 c butter, melted
1 Tbs ppoppy seeds
1 1/2 tsp Worcestershire sauce
1 1/2 tsp brown or Dijon mustard
1 tsp onion powder
How to Make Hawaiian Roll Ham Sliders
Slice top from rolls and place bottoms in baking pan.
Layer ham and cheese on rolls.
Replace tops.
Combine butter, poppy seeds, mustard, Worcestershire, and onion powder in a saucepan. Mix well.
Drizzle over rolls. Refrigerate until butter is firm or overnight.
Cover with foil.
Bake at 350° for 30 minutes or until cheese melts.
Uncover and cook for 2 additional minutes.
Serve warm or cold.

Bacon Egg and Hash Brown Casserole for a Lazy Weekend Breakfast

Ingredients

1/2 lb bacon, chopped
1 medium onion, chopped (1/2 cup)
1 bag (30 oz) frozen country-style shredded hash brown potatoes, thawed, patted dry
2 cups shredded Cheddar cheese (8 oz)
1/4 cup grated Parmesan cheese
9 large eggs
1 1/4 cups milk
1 container (8 oz) sour cream
1 teaspoon salt
1 teaspoon ground mustard
1/4 teaspoon pepper
1/2 cup cornflake crumbs or panko bread crumbs
2 tablespoons butter or margarine, melted

Steps

1 Heat oven to 350°F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray.
2 In 10-inch skillet, cook bacon and onion over medium-high heat about 10 minutes, stirring occasionally, until bacon is crisp and onion is tender; drain on paper towels.
3 In large bowl, toss bacon mixture, potatoes and cheeses. Spoon into baking dish. In same bowl, beat eggs, milk, sour cream, salt, mustard and pepper with fork or wire whisk until well blended. Pour over potato mixture.
4 Bake uncovered 35 minutes. In small bowl, toss cornflake crumbs and butter. Sprinkle over casserole. Bake 10 to 15 minutes longer or until knife inserted in center comes out clean.Source : allrecipes.com

Deviled Egg Spread

Ingredients
1 dozen large eggs
2 tablespoons white vinegar
1 cup mayonnaise
1 tablespoon yellow mustard
Salt & pepper
Paprika for dusting


How to make it
Perfect Hard Boiled Eggs
In a large saucepan, cover the eggs with cold water; make sure the water is a good inch above the eggs. Add in the vinegar. Bring to a rapid boil. Cover the saucepan and remove it from the heat. Let it stand for 15 minutes. Drain the water from eggs and cool them under cold running water. Shake the pan vigorously to crack the shells. Let the eggs cool in the water.
Shell the eggs and halve them lengthwise. Coarsely chop half the egg whites and transfer them to a large bowl. Add the remaining white and all of the yolks to a food processor along with the mayo and mustard. Process until smooth. Scrape the mixture into a bowl and blend with the chopped egg whites. Season with salt and pepper. Can be made ahead and refrigerated overnight.

I have named this cake appropriately because that’s what people say when they ask for the recipe.

INGREDIENTS:
3 large eggs
1 box cake mix (any flavor)
1 can pie filling (any flavor)
DIRECTIONS:
Put the three ingredients into a bowl, mix them well, and bake for 35 minutes at 350 degrees in a 9×13 pan.
It’s got almost a pudding-cake kind of consistency, lighter than pound cake. It’s spotted on the inside with little pieces of whatever fruit filling you are using. The edges are crispy, like you would get on brownies.
