A few years ago I made a Hawaiian wedding cake for my husband and he really enjoyed it. I kinda forgot it until the other day when I found it in my recipes.
Pineapple gives a unique taste to cakes, it is just the perfect dessert. This cake is a must try, you can serve it with or without frosting! Check how it’s made.

Several moons ago when I was going to culinary school, I spent my last semester as an intern as a cake designer at a local bakery. Then hired for free to be the cake designer for the entire store. No pressure, right?
I Was able to hold on to myself when the commands arrived. That is until we received an order for the 6-layer cookies, in size 26, and 10 “6-layer cookies that were all in different flavors the next day.
Dessert cakes are very easy to decorate, but the most time-consuming part was making all the mousses, fillings, and whipped creams they needed. I usually kept a good stock of baked cupcakes in the freezer to pull out and decorate them as needed, but this time my stock was completely depleted and I needed to bake the cupcakes too.
- Ingredients :
+You will need (for the cake):
° 1 cup white sugar.
° Half a cup of brown sugar.
° 1 teaspoon of baking soda.
° 2 cups all-purpose flour.
° 2 eggs.
° 1 can Mashed pineapple with juice.
° 1 cup of finely chopped walnuts.
° Half a cup of grated coconut.
° 1 teaspoon cinnamon.
° Half a teaspoon of nutmeg.
° 1 teaspoon salt.
° 1 tsp vanilla.
+You will need (for frost):
° 1 (an 8-ounce package of cream cheese.
° 1 cup white sugar.
° Half a teaspoon of salt.
° 1 tsp vanilla extract.
° 1 1/3 cup whipping cream.
- How:
Preheat oven to 350 degrees and grease a 9-inch round skillet or a 9 x 13 rectangular tray.
In A bowl, mixing all dry ingredients together also mixing eggs, vanilla, & mashed pineapple with juice To very well combined.
Pour the mixture into the pan and bake for 35 to 40 minutes.
To make the icing, beat the whipping cream in a small bowl until fluffy, and set aside.
Mixing Cream cheese /sugar/ salt /& vanilla in a big bowl until soft & creamy.
Add the whipped cream and mix until blended.
Once the cake has cooled, freeze it and cover it as desired, I used toasted coconut.
