Mississippi Pot Roast – Recipes Ideas

Mississippi Pot Roast

(Slow Cooker Tender Beef with Pepperoncini & Rich Gravy)

Mississippi Pot Roast is one of those easy comfort-food dinners that practically cooks itself! A beef chuck roast is slow-cooked with ranch seasoning, au jus gravy mix, butter, and pepperoncini until it’s incredibly tender and falling apart. The cooking juices turn into a rich, savory gravy that’s perfect over mashed potatoes. ❤️

Full Recipe (Ingredients + Instructions)

Ingredients 🥩

  • 3½–4 lb beef chuck roast
  • 1 tablespoon olive oil, optional for searing
  • Salt and freshly ground black pepper, lightly
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 6–8 whole pepperoncini peppers
  • ¼ cup pepperoncini juice
  • ½ cup unsalted butter
  • ½ cup beef broth, optional
  • 4 garlic cloves, minced, optional

Optional Vegetables 🥔🥕

  • 1½ lbs baby potatoes or chopped Yukon Gold potatoes
  • 4 large carrots, cut into chunks
  • 1 medium onion, quartered

Step 1: Season the Roast 🥩

Pat the chuck roast dry with paper towels.

Season lightly with black pepper and just a little salt.

Go easy on the salt! Ranch seasoning and au jus mix already contain plenty of seasoning.

Step 2: Sear the Beef 🔥

Heat olive oil in a large skillet over medium-high heat.

Sear the roast for approximately 3–4 minutes per side until it develops a beautiful dark brown crust.

This step is optional, but it adds much deeper beef flavor.

Transfer the roast to your slow cooker.

Step 3: Add the Seasonings 🌿

Sprinkle the entire packet of ranch seasoning over the roast.

Sprinkle the au jus gravy mix over that.

Add minced garlic if using.

There’s no need to stir everything together.

Step 4: Add the Pepperoncini 🌶️

Arrange 6–8 pepperoncini peppers around and on top of the roast.

Pour in approximately ¼ cup pepperoncini juice.

That tangy pepperoncini brine is one of the ingredients that gives Mississippi Pot Roast its signature flavor.

For extra tang, add a little more.

Step 5: Add the Butter 🧈

Place the butter directly on top of the roast.

If you want additional gravy, pour about ½ cup beef broth around the roast, not directly over the seasonings.

Don’t Add Too Much Liquid!

Chuck roast releases plenty of its own juices while slow cooking.

You don’t need to completely cover the meat.

Step 6: Cook Low & Slow ⏰

Cover and cook:

LOW

8–9 hours

HIGH

5–6 hours

LOW is my preferred method for the most tender result.

The roast is ready when it easily pulls apart with a fork.

Step 7: Shred the Beef 😍

Transfer the roast to a cutting board or shred it directly in the slow cooker.

Remove any large pieces of excess fat.

Use two forks to pull the beef into large, juicy pieces.

Return everything to those delicious cooking juices.

Step 8: Make That Gravy! 🥣

For a thicker gravy, remove approximately 2 cups cooking liquid and transfer it to a saucepan.

Mix:

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Whisk the slurry into the simmering cooking liquid.

Cook for 2–3 minutes until thickened.

Pour the gravy back over the shredded beef.

Now we’re talking! 🥩😍

Mississippi Pot Roast with Potatoes & Carrots 🥔🥕

Want a complete one-pot dinner?

Place potatoes, carrots, and onion around the roast before cooking.

For very soft vegetables, add them from the beginning.

If you prefer firmer potatoes and carrots, add them partway through cooking.

They’ll soak up those beefy, buttery pepperoncini juices.

Creamy Mashed Potatoes for Serving 🥔🧈

Mississippi Pot Roast and mashed potatoes are made for each other!

Ingredients

  • 3 lbs Yukon Gold or Russet potatoes
  • 6 tablespoons butter
  • ¾ cup warm whole milk
  • ¼ cup sour cream
  • Salt and black pepper

Boil potatoes in salted water until fork-tender.

Drain thoroughly.

Mash with butter, warm milk, and sour cream.

Season to taste.

Pile them onto a plate and spoon the shredded roast and gravy right over the top. ❤️

Flavor Upgrades / Secret Tips 🔥

Chuck roast is the best choice. It has enough fat and connective tissue to become incredibly tender during slow cooking.

✅ Sear the roast first for deeper flavor.

✅ Don’t add too much additional salt.

✅ Don’t drown the roast in broth—it naturally releases liquid.

✅ A splash of pepperoncini brine gives the dish its signature tang.

✅ Cook on LOW when you have enough time.

✅ Let the shredded beef sit in the cooking juices for 10–15 minutes before serving.

✅ Make extra mashed potatoes because that gravy deserves them! 😂

Frequently Asked Questions (Q&A)

Q: What cut of beef is best for Mississippi Pot Roast?
A: Chuck roast is ideal because slow cooking turns it exceptionally tender and juicy.

Q: Are pepperoncini peppers spicy?
A: They’re generally mild and tangy rather than very hot.

Q: Do I have to sear the roast first?
A: No. You can put everything straight into the slow cooker, but searing adds extra flavor.

Q: Do I need to add water?
A: Usually not. The roast releases plenty of liquid as it cooks. A small amount of beef broth can be added if you want extra gravy.

Q: Can I make it without a slow cooker?
A: Yes. Place everything in a covered Dutch oven and cook at 300°F (150°C) for roughly 3½–4½ hours, until fork-tender.

Q: Can I make it ahead?
A: Absolutely. It’s excellent the next day. Refrigerating overnight also makes it easy to remove excess solidified fat before reheating.
