- ½ cup shredded cheddar, Monterey Jack, or Mexican-blend cheese, optional
- 1 tablespoon butter
- Salt and black pepper
- Fresh cilantro, optional
- Salsa, for serving
For a Few Homemade Flour Tortillas 🫓
- 1½ cups all-purpose flour
- ½ teaspoon baking powder
- ¾ teaspoon salt
- 3 tablespoons lard or shortening
- About ½ cup very warm water
This makes approximately 6 small tortillas—perfect when you don’t need a huge batch.
1. Make the Tortilla Dough 🫓
Mix the flour, baking powder, and salt.
Work the lard into the flour with your fingertips until crumbly.
Slowly add warm water while mixing until a soft dough forms.
Knead for about 4–5 minutes until smooth.
Divide into 6 balls, cover, and let rest for 20–30 minutes.

It makes the tortillas much easier to roll and keeps them soft.
2. Cook the Tortillas 🔥
Heat a dry cast-iron skillet or comal over medium-high heat.
Roll each dough ball into a thin tortilla.
Cook for about 30–40 seconds on the first side, flip, and cook another 20–30 seconds.
Look for those beautiful little toasted brown spots.
Stack the hot tortillas immediately inside a clean towel.

3. Warm the Beans 🫘
Heat your pinto or refried beans in a small saucepan.
For whole pinto beans, add a spoonful of their broth and lightly mash a few against the side of the pan.
For refried beans, add a splash of water or broth if they’re too thick.
Keep warm.
4. Crisp the Ham 🥓
Melt a little butter in a skillet.
Add the diced ham and cook for 3–4 minutes until the edges begin to brown.
Add the onion and sliced jalapeños.
Cook another 2–3 minutes.

5. Add the Eggs 🍳
Whisk the eggs with a pinch of salt and black pepper.
Reduce the skillet to medium-low.
Pour the eggs over the ham, onion, and jalapeño mixture.

If using cheese, sprinkle it over the eggs during the final minute and let it melt.
Don’t overcook them—you want those eggs soft and fluffy.
