For the Creamy Bean Dip
- 2 cans (16 oz each) refried beans
- 1 package (8 oz) cream cheese, softened
- 1 cup sour cream

- 1 can (4 oz) diced green chiles, drained
- ¾ cup chunky salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
For the Cheesy Top 🧀

- 1 cup shredded Monterey Jack
- ½ cup Pepper Jack, optional
Loaded Toppings 🌶️
- Sliced jalapeños
- Diced tomatoes
- Green onions
- Fresh cilantro
- Pico de gallo
- Avocado
- Mexican crema or sour cream
- Black olives, optional
Step 1: Brown the Beef & Sausage 🥩🔥
Preheat oven to 350°F (175°C).
Place the ground beef and sausage in a large skillet over medium-high heat.
Cook for approximately 6–8 minutes, breaking the meat into small crumbles.
Add the onion and jalapeño and continue cooking until softened.
Add the garlic during the final 30 seconds.
Season with chili powder, cumin, smoked paprika, and a little black pepper.
Drain excess grease.
Flavor Tip ❤️
Let some of the beef develop browned, crispy edges before stirring. That little bit of caramelization adds a ton of flavor.
Step 2: Make the Creamy Base 🫘🧀
In a large mixing bowl, combine:
- Softened cream cheese
- Sour cream
- Taco seasoning
Mix until creamy.
Add the refried beans and mix thoroughly.
Then stir in:
🌶️ Green chiles
🍅 Salsa
🧀 1 cup cheddar
🧀 1 cup Monterey Jack
Step 3: Add ALL That Meat 🥩🔥
Reserve about ½ cup of the cooked meat mixture for the top.
Fold the remaining beef and sausage into the creamy bean mixture.
Now you’ve got a dip that’s actually hearty enough to make a meal out of. 😂
Step 4: Load the Baking Dish
Spread everything into a 9×13-inch baking dish.
Smooth the top.
Sprinkle with:
- Cheddar
- Monterey Jack
- Pepper Jack
Scatter the reserved beef and sausage over the cheese.
Add a few jalapeño slices if you like extra heat.
Step 5: Bake Until Bubbling 🧀🔥
Bake uncovered at 350°F (175°C) for approximately 25–30 minutes.
You want:
🔥 Bubbling edges
🧀 Completely melted cheese
🥩 A piping-hot center
For a browned cheesy top, broil for another 1–2 minutes.
Keep a close eye on it!
Step 6: LOAD IT UP! 🌶️🍅🥑
Let the dip rest for about 5 minutes.
Then finish with:
🍅 Diced tomatoes
🌶️ Jalapeños
🧅 Green onions
🌿 Cilantro
🥑 Avocado
🤍 Mexican crema
Put a giant bowl of tortilla chips next to it and watch what happens. 😂🤠
Hatch Green Chile Meaty Texas Trash Dip 🌶️💚
This is one of my favorite variations.
Replace the small can of green chiles with:
1–1½ cups roasted Hatch green chile
Chop and drain it well.
Mix half into the creamy bean mixture and scatter the rest over the top with the meat and cheese.
For extra Hatch flavor, use Pepper Jack + Monterey Jack.
Beef, sausage, beans, cheese AND roasted Hatch chile? YES PLEASE. 🌶️🔥
Bacon Cheeseburger Texas Trash Dip 🥓🍔🧀
Leave out the sausage and use:
- 1½ lbs ground beef
- 6–8 slices crispy bacon
- 2 cups sharp cheddar
- ½ cup diced pickled jalapeños
Mix half the bacon into the dip and sprinkle the remaining bacon over the top after baking.
It’s like a loaded cheeseburger collided with Texas Trash Dip. 😂
Chorizo Texas Trash Dip 🌶️🥩
For even more flavor, use:
- 1 lb ground beef
- 1 lb Mexican chorizo
Cook thoroughly and drain the excess fat before adding it to the dip.
Add roasted poblano or Hatch chile and use Oaxaca or Monterey Jack cheese.
This version is BIG on flavor.
Slow Cooker Meaty Texas Trash Dip ⏰
Brown the beef and sausage first and drain thoroughly.
Add to the slow cooker with:
- Refried beans
- Cream cheese
- Sour cream
- Taco seasoning
- Salsa
- Green chile
- Half the shredded cheese
Cook on LOW for 2–3 hours, stirring occasionally.
Add the remaining cheese during the final 20–30 minutes.
Once hot and melted, switch to WARM for serving.

Flavor Upgrades / Secret Tips 🔥
✅ Drain the cooked meat well. Too much grease can make the dip oily.
✅ Soften the cream cheese before mixing.
✅ Put cheese inside AND on top of the dip.
✅ Freshly grated cheese gives you a smoother melt.
✅ Drain excess liquid from green chiles and very watery salsa.
✅ Don’t overbake. Once it’s bubbling and hot, it’s ready.
✅ Use sturdy restaurant-style tortilla chips because this is one HEAVY scoop! 😂
✅ Let it rest for 5 minutes after baking so it thickens slightly.
