Apple Strudel

🍎 Grandma’s Apple Strudel

This old-fashioned apple strudel is the perfect dessert for family gatherings, holidays, or any special occasion. Unlike traditional Austrian apple strudel made with thin, flaky pastry, this version features a tender, homemade shortcrust filled with sweet, cinnamon-spiced apples. Finished with a smooth vanilla glaze, every bite is comforting, delicious, and full of homemade goodness!

📝 Ingredients

Apple Filling

  • 6 cups apples, peeled and thinly sliced
  • 1 cup granulated sugar
  • ½ cup all-purpose flour
  • 1 teaspoon ground cinnamon

Crust

  • 3¾ cups all-purpose flour
  • 1½ cups vegetable shortening
  • 2 egg yolks
  • Water, enough to make 1 cup total with the egg yolks
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 reserved egg white, for brushing

Vanilla Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk or light cream
  • ½ teaspoon vanilla extract

👩‍🍳 Instructions

Step 1: Prepare the Apple Filling

In a large mixing bowl, combine the sliced apples, granulated sugar, flour, and cinnamon. Toss until the apples are evenly coated. Set aside while you prepare the crust.

Step 2: Make the Dough

In a large bowl, whisk together the flour, salt, and sugar.

Add the shortening and cut it into the flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs.

In a measuring cup, combine the two egg yolks with enough water to make 1 cup total. Gradually add this mixture to the flour mixture, stirring until a soft dough forms.

Divide the dough into two equal portions.

Step 3: Prepare the Bottom Crust

Preheat the oven to 350°F (175°C).

Roll out one portion of dough into a rectangle large enough to fit a 10 × 15-inch jelly roll pan.

Carefully transfer the dough to the pan, pressing it across the bottom and slightly up the sides.

Step 4: Add the Apple Filling

Spread the apple mixture evenly over the bottom crust.

Roll out the second portion of dough into a rectangle and carefully place it over the apples.

Pinch the edges together to seal the top and bottom crusts.

Step 5: Brush and Bake

Lightly beat the reserved egg white and brush it over the top crust.

Cut a few small slits in the top to allow steam to escape.

Bake for 45–60 minutes, or until the crust is golden brown and the apple filling is bubbling.

Step 6: Prepare the Glaze

While the strudel is still hot, whisk together the powdered sugar, milk or light cream, and vanilla extract until smooth.

Spread the glaze evenly over the warm crust.

Allow the strudel to cool completely before cutting it into squares.

💡 Tips for the Best Apple Strudel

  • Choose the right apples: Granny Smith apples are great for a slightly tart filling, while Honeycrisp apples add natural sweetness.
  • Seal the edges well: This helps keep the apple filling inside while baking.
  • Glaze while warm: Spreading the icing over the warm crust helps create a smooth, beautiful finish.
  • Let it cool: Allow the strudel to cool completely so the filling can set before slicing.
