  • 1 large egg
  • ¼ cup finely diced white onion
  • 3 garlic cloves, minced
  • ¼ cup finely chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon Mexican oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper or chile powder, optional

For the Tomato Broth 🍅

  • 2 tablespoons vegetable or olive oil
  • 1 medium white or yellow onion, diced
  • 3 garlic cloves, minced
  • 4 Roma tomatoes, roughly chopped
  • 1 can (14.5 oz / 411 g) fire-roasted diced tomatoes
  • 1 tablespoon tomato paste
  • 8 cups beef or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon Mexican oregano
  • ½ teaspoon smoked paprika
  • 1 bay leaf
  • Salt and black pepper, to taste

Vegetables & Fideos 🥕🥔

  • 2 medium potatoes, peeled and cut into chunks
  • 3 carrots, sliced
  • 1 medium zucchini, cut into chunks
  • 6 oz (170 g) fideo noodles or thin spaghetti, broken into short pieces
  • 1 tablespoon oil, for toasting the noodles
  • ½ cup chopped cilantro
  • Juice of 1 lime

Step 1: Make the Albóndigas 🥩

Place the ground beef in a large bowl.

Add the uncooked rice, egg, onion, garlic, cilantro, cumin, Mexican oregano, garlic powder, onion powder, salt, black pepper, and optional chile.

Mix gently with your hands until everything is just combined.

Don’t Overmix!

Overworking ground beef can make the meatballs dense.

Mix only until everything holds together.

Step 2: Shape the Meatballs

Moisten your hands slightly.

Roll the mixture into approximately 1½-inch meatballs.

You should get around 20–24 albóndigas, depending on size.

Place them on a plate while you prepare the broth.

The rice cooks inside the meatballs while they simmer, helping make them tender and giving them that wonderful homestyle texture.

Step 3: Make the Tomato Base 🍅

Add the Roma tomatoes, fire-roasted tomatoes, and tomato paste to a blender.

Blend until mostly smooth.

You can add about ½ cup broth if necessary to help it blend.

For a more rustic soup, leave a little texture instead of blending it completely smooth.

Step 4: Build the Broth 🧅🧄

Heat 2 tablespoons oil in a large Dutch oven or soup pot.

Add the diced onion.

Cook for 4–5 minutes, until softened.

Add the garlic and cook for 30 seconds.

Pour in the tomato mixture.

Add:

  • Cumin
  • Mexican oregano
  • Smoked paprika
  • Bay leaf

Cook the tomato mixture for 5–7 minutes, stirring occasionally.

Cooking the tomato base before adding the broth gives the soup much deeper flavor. 🔥

Step 5: Add the Broth 🍲

Pour in 8 cups broth.

Bring everything to a gentle boil.

Reduce to a steady simmer.

Taste and season lightly with salt and pepper.

Remember that the broth will become more concentrated as it cooks.

Step 6: Add the Albóndigas

Carefully lower the meatballs into the simmering broth one at a time.

Don’t aggressively stir immediately after adding them.

Let them simmer undisturbed for about 8–10 minutes so they have time to firm up.

Then gently move them around with a wooden spoon.

Step 7: Add Potatoes & Carrots 🥔🥕

Add the potatoes and carrots.

Cover partially and simmer gently for approximately 15 minutes.

You want the vegetables beginning to soften while the meatballs continue cooking.

Step 8: Toast the Fideos 🍜🔥

Here’s one of my favorite tricks.

Heat 1 tablespoon oil in a separate skillet.

Add the broken fideo noodles.

Toast over medium heat for approximately 3–5 minutes, stirring frequently.

You want them lightly golden and nutty, not burned.

Why Toast the Fideos?

It gives them a deeper flavor and adds another delicious layer to the soup.

Don’t skip this if you have the extra few minutes!

Step 9: Add the Fideos

Add the toasted fideos to the soup.

Stir gently.

Simmer according to the pasta’s cooking time, usually around 7–10 minutes.

Step 10: Add the Zucchini 🥒

Add the zucchini during approximately the final 7–8 minutes.

Adding it later keeps it tender without turning mushy.

Continue simmering until:

  • Potatoes are fork-tender
  • Carrots are tender
  • Fideos are cooked
  • Albóndigas are completely cooked

Ground beef should reach 160°F (71°C) internally.

Step 11: Finish the Soup 🌿🍋

Remove the bay leaf.

Stir in:

  • Fresh cilantro
  • Lime juice

Taste the broth.

Adjust salt, pepper, cumin, or lime as desired.

Turn off the heat and let the soup rest for about 5–10 minutes.

Ladle plenty of tomato broth into a deep bowl.

Make sure everybody gets:

3–4 albóndigas + fideos + potatoes + carrots + zucchini.
