Stuffed Chilaquiles

Stuffed Chilaquiles

Have y’all ever had stuffed chilaquiles? 😍 These are filled with cheese, fried until crispy, and served with a red salsa. They’re so good, especially with plenty of crema, queso fresco, and avocado on top! ❤️

🌶️ Ingredients for the Salsa:

  • ¼ white onion
  • 3 garlic cloves, peeled
  • 7 Roma tomatoes, halved
  • 1 jalapeño, halved lengthwise
  • 6 guajillo chiles, seeds removed
  • 3 tbsp oil, divided
  • 2 cups water
  • 3 tsp chicken bouillon
  • 1 tsp Mexican oregano

🧀 Ingredients for the Masa:

  • 2 cups masa harina
  • 1½ cups water
  • Shredded mozzarella cheese, for filling
  • Oil, for frying

Instructions:

🌶️ Prepare the Salsa:

  1. Heat 2 tbsp of oil in a large skillet over medium heat. Add the guajillo chiles and quickly fry for about 15 seconds on each side. Remove and set aside.
  2. Add the onion and jalapeño to the skillet. Cook for a few minutes, stirring occasionally. Add the garlic and cook for another 1–2 minutes. Remove the garlic and set aside with the chiles.
  3. Add the tomatoes to the skillet and cook for about 5 minutes, until lightly browned.
  4. Return the guajillo chiles and garlic to the skillet. Pour in 2 cups of water, bring to a simmer, cover, and cook for 15 minutes.
  5. Remove from heat and let cool slightly. Transfer everything, including the cooking liquid, to a blender. Add the chicken bouillon and Mexican oregano. Blend until smooth.
  6. Dry the skillet and add the remaining 1 tbsp of oil. Heat over medium heat, then pour in the blended salsa. Cook for about 5 minutes, stirring occasionally. Turn off the heat and set aside.

🧀 Prepare the Stuffed Masa Triangles:

  1. In a large bowl, combine the masa harina and water. Mix until a smooth, soft dough forms.
  2. Divide the dough into 12 equal-sized balls.
  3. Line a tortilla press with plastic and flatten one dough ball into a tortilla.
  4. Place some shredded mozzarella cheese in the center and fold the tortilla over like a quesadilla.
  5. Cut the folded quesadilla in half to form two triangles. Carefully pinch the cut edges closed with your fingers to seal in the cheese.
  6. Repeat with the remaining dough balls and cheese.
  7. Heat enough oil for frying in a large skillet over medium heat.
  8. Working in batches, fry the stuffed masa triangles until golden brown and crispy on both sides.
  9. Transfer to a paper towel-lined plate to drain any excess oil.

🍽️ To Serve:

Arrange the crispy stuffed masa triangles on a plate and generously spoon the warm red chile salsa over them.

Top with your favorites! Cilantro, chopped onion, queso fresco, Mexican crema, and avocado are all great choices.
