Homemade Salsa Verde

Ingredients

  • 1½ pounds tomatillos, husked and rinsed
  • 2–3 fresh jalapeños (or serrano peppers for more heat)
  • ½ medium white onion, roughly chopped
  • 3 cloves garlic, peeled
  • ½ cup fresh cilantro leaves
  • Juice of 1 lime
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon ground cumin (optional)
  • ¼ teaspoon black pepper (optional)

Instructions

  1. Roast the vegetables
    • Preheat oven to 425°F (220°C).
    • Place tomatillos, jalapeños, onion, and garlic on a baking sheet.
    • Roast for 15–20 minutes until the tomatillos are softened and lightly charred.
  2. Blend the salsa
    • Transfer roasted vegetables to a blender or food processor.
    • Add cilantro, lime juice, salt, cumin, and black pepper.
    • Blend until smooth or pulse for a chunkier texture.
  3. Adjust the flavor
    • Taste and add more salt, lime juice, or peppers if desired.
    • For a thinner salsa, add a little water until you reach your preferred consistency.
  4. Chill and serve
    • Let the salsa cool and refrigerate for at least 30 minutes before serving.
    • Serve with tortilla chips, tacos, enchiladas, grilled meats, or as a topping for your favorite Mexican dishes.

  • For a smoky flavor, grill the tomatillos and peppers instead of roasting them.
