°1 cup sugar
°2 eggs
°200 ml vegetable oil
°1 cup flour
°1 teaspoon vanilla oil
°½ tsp salt
°1 tsp baking powder
°1 teaspoon baking soda
°1 teaspoon cinnamon
°1 cup grated carrots
°¼ cup raisins
°1/2 cup chopped pecans
+Ingredients – Icing
°50 g butter, softened
°250 g cream cheese
°1 cup icing sugar
°½ tsp vanilla oil


Preheat oven 175 °C
In a blender, combine the eggs and sugar until the colour is light and creamy.
Add the oil, flour, vanilla essence, salt, baking powder, baking soda and cinnamon and stir until just combined.
Stirring in carrots, raisins & pecans.
Bake for 35 to 40 min
Cool the cake completely before icing. For icing. Just mix all the ingredients and mix well until smooth, light and white in appearance.
Ice the cake and decorate with whole pecans and a pinch of cinnamon.
