Cracker-barrel meatloaf

1 1/2 pounds minced meat
two eggs
a cup of crushed Ritz crackers
1/4 cup milk
1/2 cup finely chopped white onion
1/4 cup finely diceed green bell pepper
14.1 ounces chopped tomatoes 1 can – drained
a teaspoon Salt
1/4 teaspoon black pepper

Meatloaf Frosting
1/2 cup tomato sauce
two tablespoons brown sugar
a teaspoon of yellow mustard
a teaspoon Worcestershire sauce

Preparing the meatloaf glaze
In a small bowl, combbine the tomato sauce, brown sugar, mustard and Worcestershire sauce.
Preparing the meatloaf
Preheat the oven to 350 ℉. Line a baking sheet with parchhment paper or foil for easy removal if desired.
In a large bowl, beat the eggs well, then add the cookie crumbs, onion, green pepper, milk, salt, diced tomatoes and pepper. Mix well.
Add the ground beef and mix well. Turn off the meatloaf mixture in the prepared pan; form a loaf.
Bake for 30 minutes, then spread the filling over the meatloaf. Bake an additional 30/35 minutes or until the center is 160 ℉.
Let stand 5 to 10 minutes to rest, then cut and serve.
