Crispy fish sticks

2 eggs.
2 cups of bread crumbs.
1/4 cup of flour.
Vegetable oil.
450 g of cod, haddock or sole fillet.
Salt and pepper.

1 -Beat the eggs in a bowl. Put the bread crumb and flour in two small plates.
2 – Sprinkle the fish with salt and pepper and chop it into small elongated pieces. Pass them first in the flour, removing the excess, then inthe egg and then in the bread crumb.
3 -Put the fish sticks in a frying pan and fry in vegetable oil for 3 minutes on each side.
4 -Put the sticks on a plate covered with kitchen paper to absorb excess fat.
