Ingredients :
° canola oil
° 2 large eggs, scrambled
° 1 cup full fat milk
° 2 tablespoons hot sauce (such as chole)
° 2 lbs large deveined raw shrimp, peeled and deveined
° 3/4 cup (about 3 1/4 ounces) all-purpose flour
° 2/3 cup (about 2 7/8 ounces) cornmeal
° 1 1/2 teaspoons kosher salt
° 1 teaspoon black pepper
° 1/2 teaspoon cayenne pepper

- Directions :
Step 1 Pour the oil to a depth of 2 inches into a large deep frying pan; Heat above medium to 370 degrees Fahrenheit.
While the oil is heating, whisk the eggs, milk, and hot sauce together in a shallow dish; Add shrimp to the mixture and stir until covered.
Whisk together the flour, cornmeal, salt, black pepper, and cayenne pepper in a separate shallow dish.
Step 2 Remove 6 to 8 shrimp from the egg mixture, and mix; Weasel in the flour mixture.
Put the crushed shrimp in the hot oil. Fry until the coating is golden and crunchy, about 2 minutes.
Lift with a slotted spoon on a baking tray lined with paper towels.
Repeat with remaining shrimp, returning oil to 370°F over medium-high heat before adding each batch of shrimp.
