TURKEY LEG IN ORANGE SAUCE WITH PLUMS AND RAISINS

INGREDIENTS (4 people):

  • 4 turkey thighs
  • 200ml of natural orange juice
  • 150ml cognac
  • 125ml olive oil
  • 150g onion
  • 2 tablespoons of Modena vinegar
  • 2 tablespoons (soups) of honey
  • 2 tablespoons (soup) of mustard
  • 75g raisins (without seeds)
  • 18 prunes
  • black pepper
  • saffron
  • Salt

PREPARATION:

Season the turkey thighs and brown them, on all sides, in the hot oil. Remove and reserve.

In the same pan, fry the onion, julienned, until transparent. Incorporate the thighs again, water with the cognac and reduce.

Add the orange juice, vinegar, honey, mustard, saffron threads and fruit. Season with salt and cook until the meat is tender: approximately 50/60 minutes, traditionally, or 10 minutes in a pressure cooker.

If we opt for the pressure cooker to make these turkey thighs in sauce, we will put it on high pressure (2) and count the time from the moment the steam begins to come out of the valve. Once the time has elapsed, remove from the heat and let the valve lower by itself.
