This Jamaican oxtails recipe falls off the bone and is packed with amazing flavor. It can be made in about an hour using a pressure cooker or cooked over a low, slow heat in a slow cooker.
If you ever asked me what my favorite Jamaican dish was, I would probably say oxtail. It’s a recipe that Mom will make for special occasions. I wish we could have it weekly but oxtail can be very pricey. So one has become a special Sunday dinner or a “Let’s Celebrate Something” dinner.
- Ingredients :
° 6 pcs of half ears of corn
° 6 smoked sausage links
° 12 cut in half if they are new large red potatoes
° 3 pounds fresh, unpeeled shrimp
° 2 teaspoons per liter of water crab seasoning
° 3 pounds foxtail
° House seasoning, recipe follows
°° 1 teaspoon olive oil
° 1 box beef broth
° 1 cup red wine
° 1 tsp sauce Worcestershire
° 6 large garlic cloves, cut in half
° 1 teaspoon dried basil
° 1 teaspoon dried marjoram
° 8 ounce can tomato sauce
° 1/2 vidalia onion, cutting to 6 wedges
° 6 new small red potatoes, cut in half
° 4 medium carrots, cut into 2 inches
° 1 bowl of hot buttered rice
House spices:
° 1 cup salt
° 1/4 cup black pepper
° 1/4 cup garlic powder
- Directions :
Pour enough water into a large saucepan to cover all the ingredients.Bring the crab to a boil.Adjust crab stick to your like.When water boils, adding potatoes / sausage.Cooking on medium heat about 21 min .Adding corn also cooking for other 10 min .Adding shrimp & cooking for no more than 3 min.Drain / serving with warm bread.
Preheaat oven 300 to 350 degres F .
Sprinkle the oxtails with a generous amount of the household seasoning on both sides.Brush the bottom of a Dutch oven with olive oil.When it’s hot, add the oxtail and fry on all sides.Remove heat and leave.Scrapping off brown pieces at bottom of pan. Adding ,,beef broth, wine, Sauce Worcestershire, & garlic. flip over.Adding basil, oregano, bay leaf, hot sauce, ketchup & oxtail and set apart .Stiir to blend all ingredients.Covering, placing in oven and baking for 2-3 h .Removing from oven & simmer on stove.Placing shallots, potatoes, garlic & carrots in saucepan.Covering & simmer for 15 minutes, to potatoes are almost cooked.
