Perfect Lemon Meringue Pie

*List of ingredients :

+Shortbread
°250g of flour
°150g butter
°50g sugar
°50 g icing sugar
°1 egg
°1 pinch of salt
+Lemon Cream :
°150 ml lemon juice or 3 or 4 lemon
°zest alemon
°150 g sugar or less according to your flavor
°3 egg
°1 C. cornstarch or flour
°75g of butter
+Meringue (optional)
°2 egg white (or 3 small ones)
°75g sugar

*Methods :

Making & baking shortcrust pastry:
Beating egg with sugars and salt
Add the flour all at once, knead with your fingertips
Adding soft butter in pieces, kneading and to a ball
Film and chill for at least 1 hour
Spread in the mold, cover with a sheet of baking paper and beans, clay balls or a string of metal balls available in supermarkets
Cooking for 11 min at 180°C, then removing and putting center back for 8-10 min to cooking well. The dough must be golden (if not, extend the cooking for a few minutes)
Book.
Making the lemon curd:
Take the zest of an untreated lemon
Bring the lemon juice to the boil with the zest
Beat eggs with sugar & cornstarch
Gradually add the lemon juice in a trickle, whisking constantly
Put everything back on medium heat and thicken, stirring well all the time, you will get a cream.

Leave to cool and then add the soft butter in pieces, beating well.
Fill the pre-baked pie shell. Book cool.
