Ingredients :
1 slice center-cut bacon, cooked & chopped {omit for vegetarian}
parsley
⅛ tsp garlic powder
⅛ tsp paprika
¼ tsp salt-free all-purpose seasoning
⅛ tsp salt
1 large baking potato {about ⅓ lb.}
½ cup cottage cheese
¼ cup shredded reduced-fat cheddar cheese, divided
1 green onion, sliced
fat-free plain yogurt, optional
Instructions :

6) Put mixture back into potato shells, and top with remaining 2 TBSP cheddar.
7) Bake for 10-15 minutes until heated through and cheese is bubbly & lightly browned.
8) Sprinkle with bacon & parsley, and serve with plain yogurt if desired. Enjoy!
