+For a coca-cola chocolate cake
°180g 70% dark chocolate
°140g butter at room temperature
°1 teaspoon baking powder
°1 tablespoon unsweetened cocoa powder
Preheat oven 180° (th6) convection heat and grease the 20cm long cake tin.
Melting chocolate in bain marie. Pour the coke into the chocolate and mix.
Add the butter and mix until it melts and the dough is smooth.
Crack the eggs and separate the whites from the yolks.
Add the egg yolks, one at a time, to the chocolate batter while mixing.
Whip the egg whites and gently fold them in with a spatula.
Pour in the flour, cocoa and yeast then mix, lifting the dough so as not to make the egg whites fall.
Pour the batter into the mold and baking for 30 mn. Check for doneness with the blade of a knife.
Remove from the oven, unmold coca-cola chocolate cake and let cool on a wire rack.
