Old Fashioned Chocolate Cake With Glossy Chocolate Icing:

Ingredients:

3 cups all-purpose flour

2 teaspoons baking soda

1 3/4 cup unsweetened cocoa powder

1 pinch salt

3 1/2 cups sugar

1 teaspoon table salt

1 2/3 tablespoons vanilla extract

3/4 cup vegetable oil

2 tablespoons white vinegar

1 1/3 tablespoons instant coffee granules

8 tablespoons unsalted butter, at room temperature

1 1/4 cups heavy cream

1/4 cup sour cream

2 cups hot water

Instructions:

Preheat the oven to 350°F (180°C).

Grease and flour two 9-inch round cake pans.

In a large bowl, sift together the flour, baking soda, cocoa powder, and salt.

Add the sugar, table salt, and vanilla extract to the bowl and mix until combined.

In a separate bowl, whisk together the vegetable oil, white vinegar, and instant coffee granules.

Add the wet ingredients to the dry ingredients and mix until just combined.

Add the hot water to the batter and stir until smooth.

Pour the batter evenly into the prepared cake pans.

Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Let the cakes cool in the pans for 10 minutes before removing them and allowing them to cool completely on a wire rack.

To make the glossy chocolate icing, melt the butter in a saucepan over low heat.

Add the heavy cream and sour cream to the saucepan and stir until combined.

Remove the pan from the heat and whisk in the cocoa powder until smooth.

Add the powdered sugar, a little at a time, whisking constantly, until the icing is smooth and glossy.

Place one cake layer on a plate or cake stand and spread a layer of icing on top.

Place the second cake layer on top and spread another layer of icing over the top and sides of the cake.

Let the cake sit at room temperature for at least 30 minutes to allow the icing to set.

Slice and serve the cake, and enjoy!
