Porcupine Meatballs

Ingredients :

1 pound lean ground beef
½ cup uncooked long grain white rice
2 Tablespoons finely chopped onion
3 Tablespoons finely chopped green bell pepper
1 package Dry Lipton Beefy Onion Soup Mix
1 egg beaten
Garlic powder to taste (opt)
1 can Diced Tomatoes in sauce( to pour over meatballs)

Directions :

Mix all ingredients together (except Diced tomatoes); shape into golf ball size balls & place into a casserole dish. Pour diced tomatoes & juice over the top of meatballs. Cover good & tight with aluminum foil & bake at 350 for 45 minutes; uncover & bake an additional 15 minutes.
Note: You may also use a small can of tomato sauce over the meatballs to use as a tomato “gravy”.
Delicious with mashed potatoes!!
** If you prefer you can use your favorite meatloaf recipe & just add in the 1/2 cup uncooked rice before making balls.
