ALMOND CAKE WITH COCONUT FILLING RECIPE :
1 box white cake mix
1 cup whole milk
1/3 cup vegetable oil
4 egg whites
2 tablespoons all purpose flour
1/2 teaspoon almond extract
Mix all ingredients then beat on medium speed for 2 minutes with hand mixer Pour into 2 9 inch greased baking pans with bottom lined with parchment paper Bake 23-25 minutes on 350° or until toothpick comes out clean Dark or coated pans bake at 325° for 30 minutes
Cool cakes completely before adding filling and frosting
Filling 1 can Ancel Coconut
FROSTING RECIPE
1 cup whole milk
3 tablespoons all purpose flour
Pinch of salt
1/2 teaspoon almond extract
1 cup butter (2 sticks)
1 cup granulated sugar
On medium heat whisk milk and flour until it thickens Remove from heat Add salt and set aside to cool Beat butter and sugar until fluffy in large bowl Add milk mixture spoonful at a time Add almond extract. Frost cake that is completely cooled Decorate with slivered almond optional
