Make-Ahead Meat-Lovers’ Lasagna Roll-Ups

These heavenly treats never fail to amaze me! I am so excited to share this with you today. Just follow these simple steps, and you can achieve perfection!

Ingredients:

Roll-Ups (to make ahead and freeze)

1/2-pound bulk pork sausage
1/2 c chopped onion
1 box (9 ounces) frozen spinach, thawed, drained, and squeezed dry
1 1/2 c tomato pasta sauce
1 pound lean (at least 80%) ground beef
2 tsp dried basil leaves or Italian seasoning
1 Egg
16 uncooked lasagna noodles
2 containers (15 ounces each) ricotta cheese

Sauce and cheese (for baking roll-ups)

2 c shredded mozzarella cheese (8 ounces)
3 c tomato pasta sauce

Directions:

1. Place a 5-quart Dutch with salted water on the stove and turn the heat to high. Allow the water to boil.

2. Add the lasagna noodles and cook until firm to bite or al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

3. Place a 12-inch skillet on the stove and turn the heat to medium.

4. Add the ground beef, sausage, and onion. Cook until crumbly and brown. Discard any accumulated fat.

5. Add 1 1/2 cup of pasta sauce, then turn the heat down to low. Stir until well blended.

6. Simmer for about 10 minutes, then remove it from the stove.

7. In a mixing bowl, add the spinach, basil, egg, and ricotta cheese. Whisk until well blended.

8. Top the lasagna with 3 tbsp of the mixture.

9. Add 1/4 cup of the meat mixture over the ricotta layer, then roll it.

10. Line with aluminium foil a 15x10x1-inch baking pan.

11. Lay the roll-ups into the prepared pan. Make sure to leave a small space between each roll.

12. Apply cooking spray in two 13×9-inch glass baking dishes.

13. Fill each baking dish with eight roll-ups, then cover them with foil.

14. Place the baking dishes inside the freezer.

15. Prepare the oven and preheat to 175 degrees C or 350 degrees F.

16. Add 1 1/2 cup of pasta sauce on top of the roll-ups and spread it evenly. Cover them with foil.

17. Place them inside the preheated oven and bake for about 30 minutes or until done.

18. Sprinkle 1 cup mozzarella cheese over each baking dish. Feel free to add more cheese.

19. Bake for another 5 minutes or until the cheese turns brown and melted.

20. Remove from the oven and allow to cool for a few minutes at room temperature.

21. Serve warm and enjoy!

Notes:

Place the roll-ups in an airtight container, then place them inside the freezer. They can last up to 3 months.
