Best Corn Nuggets

Ingredients:

2 cups (about 1 can) of whole kernel corn, drained
1 cup all-purpose flour
1/2 cup yellow cornmeal
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup milk
1 large egg
Vegetable oil for frying

Instructions:

Prepare the Batter:
In a mixing bowl, combine the flour, cornmeal, sugar, baking powder, salt, and black pepper. Mix well to combine.
Add Wet Ingredients:
In a separate bowl, whisk together the milk and egg until well beaten.
Combine Wet and Dry Ingredients:
Pour the milk and egg mixture into the dry ingredient mixture. Stir until the batter is smooth and well combined.
Fold in Corn:
Gently fold in the drained whole kernel corn into the batter.
Heat Oil:
In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350-375°F (175-190°C).
Drop the Batter:
Using a spoon or a small ice cream scoop, carefully drop spoonfuls of the corn batter into the hot oil.
Fry Until Golden:
Fry the corn nuggets for 2-3 minutes or until they are golden brown and crispy. Make sure to flip them once to ensure even cooking.
Drain Excess Oil:
Use a slotted spoon to remove the fried corn nuggets from the hot oil. Place them on a plate lined with paper towels to drain any excess oil.
Serve:
Serve the corn nuggets hot. They are great on their own or with dipping sauces like ketchup, ranch dressing, or honey mustard.
