Cheesy Corn Fritters


°1 cup all-purpose flour
°1/2 cup cornmeal
°1/2 tsp baking powder
°1/4 tsp salt
°1/4 tsp black pepper
°1/4 c Parmesan cheese
°1/4 c chop green onions
°1/2 c corn kernels (fresh or frozen)
°1 egg
°1/4 c milk
°1/4 c vegetable oil for fry
°grated cheddar cheese for garnish (optional)


In mixing bowl, combined flour, cornmeal, baking powder, salt, pepper, parmesan & green onions.
Stirring in corn kernels, egg also milk until well mixed.
Heat oil in skillet on medium-high heat.
Using a spoon or a small ice cream spoon, place the spoonfuls of dough in the hot oil.
Fry the doughnuts for 2 to 3 minutes per side or until golden and crispy.
Remove the doughnuts from the oil with a slotted spoon and place on a baking sheet lined with paper towels to drain any excess oil.
If desired, sprinkle the grated cheddar cheese over the doughnuts while they are still warm.
Serve the hot doughnuts with your favourite sauce.
